How to Clean a Smoker with Kalmetal Cleaner?

After intensive smoking, grease, smoke residue, and other impurities accumulate inside the smoker. Regular cleaning helps maintain cleanliness and hygiene and reduce residual odours from previously smoked products.

Kalmetal Grill and Oven Cleaner helps remove accumulated grease and other stubborn dirt. The cleaner has a pleasant coffee scent.

Cleaning procedure
1. Prepare the smoker
Before starting the cleaning process, make sure the smoker is completely cooled down. Remove any remaining food and larger pieces of dirt.

2. Ensure proper protection
Wear protective gloves and sealed safety goggles or a face shield. Ensure good ventilation during cleaning.

Kalmetal cleaner is corrosive – contact with the skin may cause skin damage, while contact with the eyes may cause eye damage.

3. Apply the cleaner
Spray “Kalmetal” cleaner evenly onto the surfaces of the smoker that need to be cleaned.

4. Allow it to work
Leave the cleaner to work for approximately 10 minutes. If necessary, use a sponge to scrub areas where dirt is more difficult to remove.

5. Rinse thoroughly
After cleaning, rinse all treated surfaces thoroughly with water to remove any remaining cleaner and loosened dirt.

6. Dry the smoker
Remove excess water with a dry cloth or paper towel.

First, switch on the fan for a few minutes. Only then switch on the heating and allow the smoker to dry completely.

What should you pay attention to?
Kalmetal cleaner is strongly alkaline – its pH is >12, and the sodium hydroxide it contains may corrode metals.

Therefore:

  • Do not spray the cleaner onto chrome-plated or other sensitive surfaces unless their resistance to this type of cleaner has been confirmed.
  • For sensitive surfaces or surfaces of unknown composition, first test the cleaner on a small, inconspicuous area.
  • Avoid contact with skin and eyes.
  • Do not mix the cleaner with acids.
  • Do not eat, drink or smoke while using the cleaner. Wash your hands thoroughly after use.
  • Ensure adequate ventilation and avoid high concentrations of vapour in the air.

Important after cleaning
The smoker must be thoroughly rinsed with water and completely dried before it is used again. No cleaner residue should be left on the surfaces. The Safety Data Sheet also states that the product must not be allowed to enter drains, surface water or groundwater.

A clean smoker means better hygiene, less accumulated grease and fewer unwanted odours before the next smoking session.

After casting, the cauldrons are coated with cotton oil and do not require any complicated preparation (scrubbing with a wire brush or angle grinder, burning with salt or a lot of oil).

First preparation before use:

  • We wash with soapy water. We rinse it clean. We dry it.
  • Heat as for everyday use, apply a thin layer of oil with a dry cloth or paper towel. When the oil "runs off", you can apply it a few more times. If the bottom turns "white" when heated, it means it is being heated too much.

Daily preparation:

  • We heat the cauldron, when the old oil has evaporated, we clean the ash or burnt residue with a dry paper towel.
  • We grease it with a thin layer of oil.
  • We always start cooking in a hot cauldron, unless the recipe emphasizes adding ingredients to a cold cauldron.

Cleaning up after cooking:

  • If it was a greasy dish (a pilaf, a steak, etc.), we simply wipe it dry with a paper towel.
  • If there are any lumps or burns, scrape them off with a hard wooden spatula.
  • If it was a thick stew or pureed/floury soup, you need to wash it with warm water.
  • Grease with a thin layer of oil. the sides of the handles too, if they are still new and rust appears.

Cast iron is a chemically active and porous metal alloy, so it takes quite a while to blacken the paper towel initially. The blackening will decrease with each baking.

Food should not be left in cauldrons overnight, as various reactions occur when in contact with the salts and acids in the food and the subsequent cooking will have a "metallic taste".

Grilling

To prevent food from sticking to the grill, it is recommended to heat the grill and coat it with cooking oil before placing the food, or use a raw potato to rub the grill.

The easiest way to clean the grill is by heating it, scraping it with a grill brush, and washing it with warm water.

Smoking tips

If the product turns out too dark and bitter, you may have used wood that is too moist. The wetter the firewood, the more it will smolder or smoke, and the darker the product will be.

  • Fish: 20–25 °C
  • Meat: 15–25 °C
  • Cheese: 10–20 °C
  • Vegetables: 15–25 °C

Hot smoking:

  • Fish: 60–80 °C
  • Meat: 70–110 °C
  • Cheese: 40–50 °C
  • Vegetables: 50–70 °C
